The Best Oat Cookie Ever!

Okay so I am not a baking type of gal, and I am certainly not an oat cookie lover, however, all this cold weather, wind and rain, encouraged me to spend time in my kitchen today. Needless to say I have stumbled across the best oat cookie recipe ever and I just had to share it!

These are the most decadent oat cookies ever and I dare you to cook them and not over-indulge on them (don't let my bad photo put you off)...

200g soft butter
1 cup brown sugar
1/2 cup condensed milk
1 egg
1 tsp vanilla essence
1 1/2 cups flour
1/2 teaspoon baking soda
2 cups rolled oats
1 cup dried cranberries or raisins
1 cup white chocolate bits

Oven to 180C. Cream butter, then beat in sugar and condensed milk. Add the egg and essence and beat until light and fluffy.

Sift flour and baking soda together and stire into mixure. Stir in oats, cranberries and chocolate.

Put tablespoons onto greased tray and press down with fork (it is a bit sticky so I put in fridge for 5 mins). Bake for 15(ish) mins until golden brown.

Cool and enjoy!
